Tia Maria Truffles

Hi All!

This next recipe is from my Tia Leocadia, and they’re small cookie truffles that are easy to make and come to you at the perfect time for the holidays.  Enjoy!

Yields: 20-25 truffles

Ingredients:

1 packet of “Maria Biscuit Cookies,” or other sweet biscuit cookie of your choice

1/2 cup whole milk

3/4 cup granulated sugar

7 tablespoons cocoa powder

sweetened coconut flakes, for topping

Note: I use the Maria biscuit cookies made by the Goya brand, and they can usually be found in the Hispanic/Latin grocery aisle.

Directions:

1) Using a food processor, pulse cookies until they are roughly chopped and crumbly.  You want some texture, so don’t pulse too fine.

2) In a medium-sized pot, add milk, sugar, and cocoa powder and cook over medium heat.  Add cookies and stir until mixture becomes stiff.  Remove from heat and allow to cool.

3) Roll into balls and place in small foil cups. Dust with cocoa powder and coconut flakes or other toppings as desired.
